Sopa de Fideo

Sopa de Fideo is a comforting Mexican-style noodle soup made by blending fire-roasted diced tomatoes with onion, garlic, and cumin, then straining to create a smooth tomato base. Fideo pasta is toasted in olive oil before combining with the tomato sauce and broth, producing a light yet satisfying soup with tender noodles infused with rich tomato and spice notes. This simple recipe balances flavor and texture thoughtfully to offer a traditional yet accessible meal.

Description

Sopa de Fideo features fire-roasted diced tomatoes blended with onion, garlic, and ground cumin to make a smooth, flavorful tomato sauce. Straining the sauce ensures a velvety base without lumps or pulp. The fideo pasta is browned lightly in olive oil to give it a subtle nuttiness and prevent clumping. Adding the tomato sauce and chicken or vegetable broth followed by simmering tenderizes the thin noodles and melds flavors.

The soup yields a warm, lightly spiced broth with tender pasta that absorbs the tomato essence. It can be served as a light entrée or comforting side, making it suitable for casual meals or when desiring a gentle, soothing soup. Adjusting salt after cooking helps balance seasoning to taste.
