Southern Blueberry Cobbler Recipe
Description
This cobbler uses a filling of blueberries tossed with lemon juice, lemon zest, sugar, flour, and a touch of cinnamon. For frozen berries, the flour amount is increased to prevent excess liquid persisting after baking. The topping is made by cutting cold butter into a mixture of flour, sugar, baking powder, and salt until crumbly, then stirred with milk to form a batter. This is spread over the fruit filling and sprinkled with coarse sugar before baking.
During baking, the butter melts and combines with the flour mixture to form a tender, cakey crust with slight crispness on top. The blueberry filling bubbles underneath, releasing bright acidity balanced by sweetness and mild cinnamon aroma. The interplay between juicy fruit and soft topping is the hallmark of this dessert.
It is typically served warm and can be enjoyed on its own or with cream or ice cream. The recipe advises adjusting sugar based on the sweetness of the berries and offers the option to increase cinnamon or add nutmeg for more spice.
The butter should be cut into small pieces before mixing for easier blending into the flour mixture. Using fresh or frozen berries impacts the consistency but can be managed by adjusting flour in the filling.
