Description
The recipe combines sugar, buttermilk, vegetable shortening, butter, and baking soda, cooking these ingredients together in a heavy pot over medium heat. Constant swirling prevents burning and ensures even cooking. The mixture is heated to the soft-ball stage (235º - 245º F), which is then tested by dropping a bit in cold water to check pliability.
Once the correct temperature is reached, the mixture is removed from the heat and beaten, either by hand or with a mixer, until it becomes creamy and spreadable. This beating process incorporates air, resulting in a light texture despite the rich ingredients.
Southern Caramel Icing is typically applied to a caramel cake, providing a moist finish with a deep caramel taste. Its texture is soft enough to spread easily but holds its shape well.
Ingredients
- 2 cups sugar
- 1 cup buttermilk
- 1/2 /2 cup vegetable shortening brand Crisco
- 1/2 /2 cup butter
- 1 teaspoon baking soda
Instructions
- Mix all ingredients in a 3-4 quart cast iron dutch oven and place over medium heat.
- Swirl pan to keep ingredients moving in the pan.
- Cook to softball stage 235º - 245º on a candy thermometer or when tested in a cup of cold water.
- Remove from heat and beat with a wooden spoon until creamy and ready to spread. If using mixer, once your icing has reached the softball stage, whip the icing until it holds to the whisk when you stop the mixer.
