Southern Living's Hummingbird Cake
Description
This Hummingbird Cake uses three layers of rich cake batter combining all-purpose flour with cinnamon and nutmeg for warmth. Ripe mashed bananas and canned pineapple juice add moisture and natural sweetness, while toasted chopped pecans give a crunchy texture in the soft cake. The batter is baked at 350°F in three pans, yielding moist, tender cake layers.
The cream cheese frosting is whipped smooth from softened cream cheese and butter, combined with vanilla and sifted powdered sugar for a creamy, thick finish. The cake layers are stacked with frosting between and coated on the outside, creating a visually appealing and flavorful dessert.
This cake serves well as a celebratory dessert or for gatherings, where its blend of spiced fruit flavors and creamy frosting is appreciated. Cooling the layers before assembly ensures the frosting sets properly and the cake holds together when sliced.
Following the original Southern Living recipe ensures consistent texture and flavor. Toasting pecans adds extra depth that complements the fruit in the cake.
