Southwest Chicken Chili

Loaded with shredded chicken, beans, and bold flavors, this easy dump-and-go Southwest chicken chili recipe is perfect for busy weeknights!

  • 2 pounds chicken breast boneless, skinless
  • 1 yellow onion diced
  • 3 cloves garlic
  • teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon paprika
  • 1/2 teaspoon oregano dried
  • 2 cans cannelini beans 15.5 ounce each
  • 12 ounces corn about 2 cups, frozen
  • 2 cans green chiles 4 ounces each, diced
  • 4 cups chicken broth

Toppings (optional)

  • cilantro
  • lime
  • tortilla chips
  • cheddar cheese shredded
  • sour cream

Instructions

  1. Place the diced onion and garlic on the bottom of the crockpot. Place the chicken breast on top of the onion.
  2. Sprinkle with the cumin, chili powder, salt, black pepper, paprika and oregano.
  3. Add the cannelinni beans, corn, and green chiles, then top with the chicken broth.
  4. Cook on high for 3-3.5 hours, or low for 4-4.5 hours.
  5. Once done, remove the chicken and shred, then stir back into the chicken chili. Serve in bowls with your choice of toppings.
