SOUTHWEST CHICKEN WRAP

This Southwest Chicken Wrap is a quick, easy, and flavorful meal perfect for lunch or a light dinner. Tender chicken is seasoned with Southwest spices, then combined with your favorite fixings like black beans, corn, cheese, and a zesty sauce, all wrapped up in a tortilla.

Chicken:

  • 1 boneless skinless chicken breast (about 6 ounces) or 1 cup shredded cooked chicken
  • 1 tablespoon olive oil if cooking chicken
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • salt and pepper to taste

Wrap:

  • 1 large flour tortilla 10-12 inch

Fillings:

  • ¼ cup black beans rinsed and drained
  • ¼ cup corn fresh, frozen, or canned
  • ¼ cup shredded cheddar cheese or a Mexican blend
  • ¼ cup chopped lettuce romaine or iceberg
  • 2 tablespoons salsa or pico de gallo

Sauce (choose one or combine):

  • 2 tablespoons ranch dressing
  • 1 tablespoon Chipotle mayo mayonnaise mixed with chipotle peppers in adobo sauce
  • 1 tablespoon Avocado Crema mashed avocado mixed with lime juice, cilantro, and salt

Instructions

  1. Cook chicken (if needed): If using raw chicken, heat the olive oil in a skillet over medium-high heat. In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the spice mixture all over the chicken breast.
