Southwest Vegan Stuffed Peppers

Southwest Vegan Stuffed Peppers feature green bell peppers filled with a seasoned mixture of brown rice, onions, fire-roasted tomatoes, kidney and black beans. Spiced with chili powder and taco seasoning, this dish combines hearty textures and southwestern flavors. Description

The preparation begins by cooking brown rice with onions, fire-roasted tomatoes, and chili powder until the rice absorbs the liquid and softens. Green bell peppers are prepared by cutting tops off, seeding, and boiling them until tender but still firm. The beans are seasoned with taco seasoning and warmed, then combined with the rice mixture.

The filling is spooned into the cooked peppers which are then baked at 350°F for 10 minutes to marry the flavors and heat through. This creates a satisfying, plant-based main course with layers of smoky, spicy, and hearty elements.

Ingredients

  • 1 cup brown rice uncooked
  • 1 cup onion diced
  • 1 tomatoes fire-roasted, canned
  • 2 cups water divided
  • 1 tablespoon chili powder
  • 1 Kidney Beans rinsed and drained, 15-ounce can
  • 1 black beans rinsed and drained
  • 1 taco seasoning your favorite brand
  • 4 large green bell pepper

Instructions

  1. In a large non-stick pot over medium-high heat, add brown rice and onion. Cook for 5 minutes until the onion begins to soften and become translucent.
  2. Add the tomatoes, 2 cups of water, and chili powder to rice. Cover, lower heat to a simmer, and let cook until water is absorbed.
  3. Preheat the oven to 350 degrees F (176 degrees C).
  4. While rice is cooking, cut tops off of bell peppers and remove seeds. Place the peppers in a large pot of boiling water. Let boil until the peppers become light green, and soft. Remove from water and place the peppers in a small pan.
  5. Place beans in a non-stick pan, add taco seasoning, and 3 tablespoons of water. Mix well, and add cooked rice mixture. Continue to cook until beans are warm. 
  6. Scoop rice and bean mixture into bell peppers. Place them in the oven for 10 minutes. Remove from the oven and top with your favorite taco sauce or salsa.
