Ingredients
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 2 red bell peppers seeded and diced
- 1 Jalapeño seeded and diced
- 2 cups heavy cream
- 1 large egg
- 1 sourdough bread torn into large chunks
- 6 ounces cubed cheddar cheese cut into very small cubes
- 1 cup chopped fresh cilantro
- 1 pound cooked and crumbled bacon

Instructions
- Preheat oven to 425 degrees. Prepare a 9x13 pan by spraying it lightly with nonstick spray.
- In a medium saucepan make a roux by melting the 2 tablespoons butter and then whisking in the 1/4 cup all-purpose flour to form a bubbly mixture. Add in the 1 teaspoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon salt and 1/4 teaspoon black pepper for flavoring. Pour in the 2 cups chicken broth and whisk to combine. Add in the diced 2 red bell peppers and 1 jalapeno and bring to a boil. Once boiling the mixture will thicken quickly. Once it thickens remove from heat and set aside.
- In a small bowl whisk together the 2 cups heavy cream and 1 large egg. Set aside.
- In a large mixing bowl mix together the 1 sourdough bread chunks and 6 ounces cubed cheddar cheese. Slowly pour the cream mixture over it and stir to moisten everything. Then pour the chicken broth mixture over, add in the chopped 1 cup chopped fresh cilantro and the cooked and crumbled 1 pound cooked and crumbled bacon and stir to combine. Immediately transfer it to the prepared 9x13 pan and spread it out in an even layer.
- Bake at 425 degrees for 30 minutes, until the top starts to brown.
