Soy Ginger Meatballs
Description
The recipe uses ground pork combined with panko breadcrumbs, egg, green onions, cilantro, soy sauce, garlic, ginger, lime zest, and spices to form meatballs. These are baked at 425°F, turning them halfway through to ensure even cooking and a slight crispness outside while remaining tender inside. The ingredient mix lends a fresh, zesty, and mildly spicy profile enhanced by the lime zest and fresh herbs.
The dressing provides a layered flavor with acidity from lime juice and rice wine vinegar, umami from soy sauce, sweetness from maple syrup, and a hint of heat with red pepper flakes. Sesame oil and fresh minced garlic and ginger add depth and fragrance. This sauce complements the meatballs when drizzled over or served on the side.
To serve, the meatballs can be placed over vermicelli rice noodles or plain rice with fresh vegetables like shredded cabbage, cucumber, carrot, red bell pepper, and herbs such as mint, basil, and cilantro. Garnishes like chopped peanuts and sesame seeds add texture. Lime wedges allow adding fresh citrus brightness at the table.
