This refreshing raw carrot salad with soy sesame dressing comes together so quickly and easily with a handful of ingredients. Crisp-tender carrots tossed with green onions, sesame seeds, and a flavorful homemade dressing, this is the perfect spring or summer salad!

Ingredients
- 4 to 5 large carrots peeled and ribboned
- 1½ tablespoons soy sauce low sodium
- 2 tablespoons sesame oil
- 1 tablespoon maple syrup or honey
- ½ tablespoon rice vinegar unseasoned
- 1 tablespoon minced garlic
- 1 tablespoon sesame seeds toasted
- 2 green onions sliced

Instructions
- In a small bowl, mix together the soy sauce, sesame oil, maple syrup, rice vinegar, and minced garlic.
- In a large mixing bowl or salad bowl, add the ribboned carrots, toasted sesame seeds, green onions, and salad dressing.
- Toss well to combine. If you have the time, cover and let the salad chill in the fridge for 10 minutes to let the flavors meld together before serving.
