Soy Sesame Raw Carrot Salad

This refreshing raw carrot salad with soy sesame dressing comes together so quickly and easily with a handful of ingredients. Crisp-tender carrots tossed with green onions, sesame seeds, and a flavorful homemade dressing, this is the perfect spring or summer salad!

Ingredients

  • 4 to 5 large carrots peeled and ribboned
  • tablespoons soy sauce low sodium
  • 2 tablespoons sesame oil
  • 1 tablespoon maple syrup or honey
  • ½ tablespoon rice vinegar unseasoned
  • 1 tablespoon minced garlic 
  • 1 tablespoon sesame seeds toasted
  • 2 green onions sliced

Instructions

  1. In a small bowl, mix together the soy sauce, sesame oil, maple syrup, rice vinegar, and minced garlic.
  2. In a large mixing bowl or salad bowl, add the ribboned carrots, toasted sesame seeds, green onions, and salad dressing.
  3. Toss well to combine.  If you have the time, cover and let the salad chill in the fridge for 10 minutes to let the flavors meld together before serving.
