Description
This soup features a broth of chicken broth, water, garlic, onion, tomato sauce, parsley, basil, and optional red pepper flakes for subtle heat. Ground turkey is combined with Parmesan cheese, egg, garlic, onion, parsley, breadcrumbs, salt, and pepper to form small one-inch meatballs.
The meatballs cook gently in simmering broth before adding cut spaghetti pasta, which cooks until tender but firm. Fresh basil is added towards the end to impart fragrance and fresh herb flavor.
The result is a balanced soup with rich, moist meatballs and satisfying pasta in a flavorful broth that carries tomato and herb notes. Grated Parmesan cheese served on top brings added depth and seasoning. This soup makes a warming meal with bright yet hearty elements.
Ingredients
- 5 cups low sodium (chicken broth)
- 16 oz ground turkey or 99% lean, 93% lean
- 2 cups water
- 1 large egg
- 2 garlic chopped and divided, cloves
- 1/4 cup seasoned breadcrumbs
- 4 tbsp parsley divided, chopped, fresh
- 1/4 cup Parmesan Cheese grated
- 1/2 onion (chopped, divided)
- 1 tbsp basil fresh, chopped
- 3-4 tbsp tomato sauce (I use my quick marinara sauce)
- pinch red pepper flakes optional, crushed
- kosher salt
- black pepper
- 6 oz spaghetti dry, cut up
Instructions
- Heat a large pot over high heat and add chicken broth, water, 1 clove crushed garlic, 2 tbsp chopped parsley, 1/4 of the chopped onion, tomato sauce, crushed red pepper flakes and fresh black pepper to a boil, When it comes to a boil simmer about 5 minutes.
- Meanwhile, make the meatballs by combining ground turkey, Parmesan cheese, egg, remaining garlic, remaining onion, remaining parsley, breadcrumbs, salt and pepper. Form into little 1 inch meatballs (about 36).
- Drop meatballs into the broth, cook about 3 minutes; add pasta and cook according to package directions.
- Add fresh basil, adjust salt and pepper to taste and serve with grated Parmesan cheese.
