Ingredients

  • 2 tablespoons vegetable oil divided
  • 3 egg beaten, large
  • 12 ounces SPAM diced
  • 2 cloves garlic minced
  • 1/2 cup peas thawed, frozen
  • 1/2 cup corn thawed, frozen
  • 4 cups rice preferably day-old, cooked
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 green onions chopped

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
  2. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the diced Spam and cook until crispy and golden brown, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Add the thawed peas and corn to the skillet and cook for 2 minutes until the vegetables are tender.
  5. Add the cooked rice to the skillet and stir to combine with the Spam and vegetables.
  6. Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir well to evenly coat the rice.
  7. Add the scrambled eggs back to the skillet and mix until everything is well combined and heated through.
  8. Garnish with chopped green onions and serve immediately.
