Description

This Spanish Gazpacho combines ripe plum tomatoes with green and red bell peppers, garlic, cucumber, and red onion, all roughly chopped before blending. Processed until perfectly smooth, the mixture captures the fresh essence of the vegetables. Adding vinegar and olive oil during blending provides harmonious acidity and richness. Cold water is incorporated gradually to adjust the consistency to preference, making the soup lighter and easier to sip.

Ingredients

  • 1 kg plum tomatoes
  • 1 green pepper
  • ¼ red bell pepper
  • 1 garlic clove
  • ¼ cucumber large
  • ½ red onion
  • 2 tablespoons vinegar
  • 3 tablespoons olive oil
  • ¾ water cold, 1 cup
  • Pinch salt

Instructions

  1. Rinse the vegetables with cold water.
  2. Roughly chop the tomatoes, green pepper, bell pepper, garlic, cucumber and onion and add them into the food processor or blender.
  3. Blend until you have a perfectly smooth consistency. This can take a couple of minutes.
  4. Add the vinegar and olive oil and blend for another minute until all the ingredients are perfectly incorporated.
  5. While the blender is on, slowly add the cold water until you have the desired consistency.
  6. Add a pinch of salt before you stop the blender and your gazpacho will be ready to go.
  7. Refrigerate you a couple of hours before serving, as gazpacho needs to be eaten cold.
