Description
This recipe starts by melting sugar with light corn syrup over medium-low heat without boiling, then mixing in creamy peanut butter and vanilla to create the binding syrup. The syrup is combined with Special K cereal in a large bowl and pressed into a prepared pan to form the base layer.
The topping is made by heating butterscotch and semi-sweet chocolate chips in the microwave until melted and spread evenly over the cereal mixture. Chilling in the refrigerator allows the topping to set, forming a firm chocolate-butterscotch layer on top of crisp cereal bars.
The resulting bars balance crunchy and soft textures along with the sweetness of butterscotch and chocolate complementing the peanut butter-cereal base. Cutting into bars makes them handy for snacks or desserts.
Using a smaller pan yields thicker bars. Avoid overheating the syrup to prevent hard bars and store at room temperature to maintain softness. Bars can also be frozen if desired.
Ingredients
- 1 cup white sugar
- 1 ¼ cups light corn syrup
- 1 cup peanut butter creamy
- 2 teaspoon vanilla
- 6 cup Special K Cereal
- 1 cup butterscotch chips
- 1 cup chocolate chips semi-sweet
Instructions
- Coat a 13 x 9-inch baking pan with cooking spray.
- Combine sugar and corn syrup in a large saucepan. Cook over medium-low heat, stirring frequently, until melted. Do not bring to a boil. Add peanut butter and vanilla. Stir until smooth. Remove from heat.
- Put cereal in a large mixing bowl. Add peanut butter mixture; stir until thoroughly coated. Press onto the bottom of the prepared baking pan.
- Microwave butterscotch morsels and semi-sweet chocolate chips in a large, uncovered, microwave-safe bowl for 1 minute; stir. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until smooth. Spread over cereal mixture.
- Refrigerate for 15 to 20 minutes or until the topping is firm. Cut into bars.
Notes
- For thicker bars and frosting, use a smaller pan such as 8 x 11 inches instead of 13 x 9 inches.
- Avoid overcooking the sugar and corn syrup mixture to keep bars soft and chewy; do not let it boil.
- Keep bars at room temperature to retain softness; refrigeration will harden them, so allow to sit at room temperature before serving.
- These bars keep well for up to a week and can also be frozen for longer storage.
