Spice cake ingredients

  • 2 3/4 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/8 tsp cloves
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar packed
  • 1 cup neutral tasting oil
  • 4 egg
  • 2 tsp vanilla extract
  • 1/4 cup orange juice

Spice Cake frosting ingredients

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350F and grease a 9x5 loaf pan or line it with parchment paper. In a medium sized mixing bowl whisk together flour, salt, baking powder, baking soda, cinnamon, ginger, nutmeg, allspice and cloves.
  2. In a large mixing bowl whisk together eggs and sugars. Mix until the sugars are dissolved and the ingredients and evenly combined. Whisk in vanilla extract.
  3. Fold half of the dry ingredients into wet and then mix in the oil. Fold in the other half of the dry ingredients and then mix in the orange juice.
  4. Pour the batter into the loaf pan and bake in the oven at 350F for 80-85 minutes. Test that the loaf is finished cooking by sticking a toothpick into the middle. If the toothpick comes out clean, it is cooked all the way through. Remove the spice cake from the oven and allow it to cool completely.
  5. While the loaf cools, prepare the icing by mixing together powdered sugar, milk and vanilla extract until a smooth icing remains.Only when you are certain that the cake is fully cooled, pour the icing over top. Cut into slices and serve
