Ingredients

  • 1/2 cup old-fashioned oats not quick cooking
  • 1/4 cup almond milk sweetened; any milk will work
  • 1/3 cup yogurt plain, Greek
  • 1 teaspoon maple syrup plus more to taste
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch ground turmeric optional
  • 1 apple cored and chopped
  • 1 date pitted; optional
  • lemon juice fresh, squeeze of
  • kosher salt small pinch
  • 6– 8 ice cubes

Toppings: roasted pumpkin seeds, roasted sunflower seeds, coconut, chopped apple, and additional maple syrup drizzled over.

Instructions

  1. Place all ingredients in a blender, and blend until smooth. The texture should be thick enough to eat with a spoon. Adjust flavors by adding more maple syrup or lemon juice.
  2. Pour smoothie into a bowl, and add toppings to taste. Enjoy immediately!
