  • 1 3/4 cups red Zinfandel wine good quality
  • 1 cup sugar
  • 1 cup light brown sugar packed
  • 6 clove whole
  • 8 allspice whole
  • 6 black peppercorns
  • 2 cinnamon stick
  • 2 orange zest 3 x 1-inch strips
  • 1 ounce cranberries fresh, in bag

Instructions

  1. Place wine, sugars, spices and orange zest in a medium saucepan over medium-high heat. Bring to a boil, stirring to dissolve the sugar, then reduce heat to medium-low and simmer until the mixture has reduced to 1 3/4 cups (10 - 15 minutes), stirring occasionally.
  2. Pour the wine mixture through a strainer into a clean bowl, then pour the syrup back into the saucepan. Discard the solids. Add the cranberries to the syrup, and cook over medium heat until they burst and soften (5 - 6 minutes), stirring occasionally. Transfer to a clean jar, cover and refrigerate until ready to serve. Can be made up to 1 week in advance.
