Spiced Fig and Mushroom Kebabs

Spiced Fig and Mushroom Kebabs combine cumin, coriander, and preserved lemon rind to marinate mushrooms before skewering them with sweet figs. Cooking over high heat chars the mushrooms and figs slightly, creating a contrasting texture with the tender interior. This kebab balances earthy mushrooms with fruity figs and bright lemon flavors, making it a distinctive appetizer or light meal served with hommus and salad.

Description

These kebabs feature button mushrooms marinated in a spice blend of ground cumin, ground coriander, preserved lemon rind, olive oil, lemon juice, and salt. The mushrooms absorb the spices during a 30-minute refrigeration, infusing them with warm, citrusy notes. Alternating mushroom halves and halved figs on skewers brings together savory and sweet elements.

Cooking over high heat in a frying or grill pan quickly chars the mushrooms and figs, enhancing their flavor through caramelization. The mushrooms cook through while the figs soften but maintain shape. The result is a skewer with a mix of textures: tender mushrooms with slightly crispy edges and soft figs.

These kebabs can be served in flatbreads accompanied by hommus and salad. The note emphasizes that the blackened look on mushrooms is from the spices and adds to the flavor, encouraging confidence in the appearance after cooking.

Ingredients

Servings
  • 1 ½ tsp cumin ground
  • 1 ½ tsp ground coriander
  • 2 tsp preserved lemon rind finely chopped
  • lemon juice of 1
  • 2 tsp olive oil
  • salt to taste
  • 8 button mushrooms halved
  • 4 figs halved
  • cooking oil for frying

Instructions

  1. Place the spices, preserved lemon, olive oil, salt and lemon juice in a bowl and whisk to combine. Add the mushrooms to the spice mixture and toss to ensure the mushrooms are well coated. Cover with plastic wrap and refrigerate for 30 minutes.
  2. Thread 2 mushroom halves onto a skewer, add a piece of fig and add another 2 mushrooms. Repeat with the remaining mushrooms and figs.
  3. Preheat a frying pan or grill pan over a high heat and cook for 5 to 7 minutes, or until lightly charred on each side, and the mushrooms are cooked through.
  4. Serve in flat breads, with a dollop of hommus and salad.

Notes

  • The blackened appearance on mushrooms after cooking is due to the spices and enhances their flavor.
