Spiced Pumpkin Cake:

  • 2 cups flour
  • 2 tsp baking powder `
  • 1 ¾ tsp cinnamon
  • 1 tsp baking soda
  • ¾ tsp nutmeg
  • ¼ tsp cloves
  • tsp dried ginger
  • salt pinch
  • 1 (15 oz) pumpkin puree Not Pumpkin pie filling, canned
  • cups white sugar
  • 1 cup vegetable oil
  • 4 egg
  • 1 tbsp maple syrup real

Maple Cream Cheese Frosting:

  • ½ cup butter unsalted, softened to room temperature
  • 6 oz cream cheese softened to room temperature
  • 3 cups powdered sugar
  • 3 tbsp maple syrup real
  • 1 tsp vanilla
  • ¼ tsp cinnamon

Instructions

  1. Preheat the oven to 350 degrees. Coat a 9 x 13 baking pan with cooking spray.
  2. Make the pumpkin cake by combining the flour, baking powder, ground cinnamon, baking soda, nutmeg, clove, ginger, and salt together in a bowl until well combined.
  3. In another large bowl, beat the pumpkin puree, white sugar, vegetable oil, and eggs together with a mixer until creamy and smooth, about 45-60 seconds.
  4. Gradually add the flour mixture to the pumpkin mixture until the batter comes together and there are only a few lumps. Add the maple syrup and stir to combine. Pour the batter into the prepared baking pan.
  5. Bake for 25-30 minutes, or when a wooden tester inserted in the center comes out with moist, not wet, crumbs. Remove from the heat and cool on a wire rack completely.
  6. Make the maple cream cheese frosting by combining the powdered sugar, butter, cream cheese, pure maple syrup, and vanilla extract in a bowl. Beat with a hand mixer until creamy and smooth.
  7. Spread the frosting over the cooled cake and serve.
  8. Refrigerate the remaining cake in a sealed container.  Enjoy.
