Spicy Chicken Tikka (Kebab)

This recipe for Spicy Chicken Tikka features skewered boneless chicken marinated in a mixture of yogurt and spices, broiled until tender and juicy.

Ingredients

  • 2 chicken breast large
  • ¼ C Greek yogurt
  • 1 tablespoon vegetable oil
  • 1 teaspoon lemon juice
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic grated
  • 2 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 3 teaspoon Kashmiri red chili powder or to taste
  • ½ teaspoon ground coriander
  • ½ teaspoon cayenne pepper powder
  • ¼ teaspoon ground cardamom
  • ¾ teaspoon salt or to taste, sea salt
  • ½ teaspoon black pepper

Instructions

Marinate the chicken:

  1. Combine yogurt, oil, lemon juice, ginger, garlic, spices and seasonings in a large bowl.
  2. Add in the chicken breast, and coat with the yogurt marinade.
  3. Cover with a lid/plastic wrap and place into the fridge to marinate for a minimum of 20 minutes or overnight.

Assemble:

  1. Thread the marinated chicken onto the skewer, alternating with red onion and bell pepper.
  2. Place the prepared skewers onto a metal wire rack on top of a baking sheet lined with aluminum foil.
  3. Repeat with the remainder.

Broil the chicken:

  1. Preheat oven broiler to 500°F/260°C.
  2. Broil the skewers about 1.5-2" from the top element for about 10-12 minutes, turning them halfway, or until slightly charred and cooked through to an internal temperature of 165°F/74°C. 
  3. Serve with basmati rice or naan.
