  1. Prepare the pan: Line a baking sheet with parchment paper.
  2. Melt the chocolate: In a heatproof bowl set over a saucepan of simmering water (double boiler), melt the dark chocolate, stirring frequently until smooth. Alternatively, you can melt the chocolate in the microwave in 30-second intervals, stirring after each interval, until melted and smooth. Be careful not to overheat the chocolate, as it can seize.
  3. Add spices and nuts: Remove the melted chocolate from the heat. Stir in the chipotle powder and sea salt (if using). Taste and adjust the amount of chipotle powder if needed.
  4. Spread the chocolate: Pour the melted chocolate onto the prepared baking sheet. Spread it evenly into a thin, even layer using a spatula.
  5. Add almonds: Sprinkle the sliced almonds evenly over the melted chocolate. Gently press them into the chocolate.
