Spicy Cold Kimchi Noodles
Description
Spicy Cold Kimchi Noodles feature somen noodles that are cooked until just tender and then quickly cooled under cold running water to stop cooking and firm their texture. The noodles are then tossed with aged kimchi pieces and their juices alongside a bibim sauce comprised of gochujang, rice vinegar, honey, raw sugar, sesame oil, and toasted sesame seeds. This sauce offers a balanced harmony of spicy, sweet, and tangy flavors. The dish is served cold, topped with crisp julienned cucumber and a halved hard-boiled egg, which adds protein and a creamy contrast. This method preserves the fresh, vibrant notes of the ingredients and results in a light, textured noodle salad that can be enjoyed as a snack, light lunch, or side dish. The hands-on mixing ensures a good coating of the sauce and kimchi flavors throughout the noodles.
