Spicy Griddled Tofu “Steaks”

Spicy Griddled Tofu "Steaks" feature firm tofu slices coated with a dry spice blend including cumin seeds, chili powder, garlic powder, and optional Sichuan peppercorn for a hint of numbing heat. The tofu is pan-seared with hoisin and soy sauce, giving a savory glaze and layered flavors. The texture balances crisped, golden surfaces with tender centers. Garnished with fresh scallion and cilantro, these tofu steaks work well as a main or side dish.

Description

This recipe begins with firm tofu drained and sliced into thick "steaks." The cumin seeds are crushed with spices like chili and garlic powder plus optional Sichuan peppercorn powder, which add warmth and a complex, slightly pungent flavor. The tofu is cooked in neutral oil until golden brown on each side, while being brushed with a savory mixture of hoisin and soy sauce. This imparts a glossy surface and rich taste.

The cooking method results in tofu with crisp edges and a tender, moist interior, contrasting textures that make the dish satisfying. Fresh scallions and cilantro sprinkled on top introduce brightness and herbaceousness. These tofu steaks can be served as a vegetarian main dish or alongside other components in a meal.

Ingredients

Servings
  • 1 pound tofu firm
  • 1 teaspoon cumin seeds
  • ¼ teaspoon Sichuan peppercorn powder optional, ground
  • 1 teaspoon red chili pepper powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 tablespoons neutral cooking oil plus 1 teaspoon, generic cooking oil
  • 1 tablespoon hoisin sauce
  • 1 teaspoon soy sauce
  • 1 tablespoon cilantro (chopped)
  • 1 tablespoon scallion (chopped)

Instructions

  1. Open the package of tofu and place on a plate to drain for 10 minutes. Slice it into ¾-inch thick pieces. Use a mortar and pestle to roughly crush the cumin seeds and add the Sichuan peppercorn powder if using, chili powder, garlic powder, and salt. Mix well.
  2. Combine 1 teaspoon oil, hoisin, and soy sauce in small bowl. Heat two tablespoons of oil in a cast iron skillet or nonstick pan over high heat and carefully place the tofu in the pan.
  3. Next, sprinkle about half of the dried spices evenly over the tofu and let cook for 3-5 minutes. When the bottom is golden brown, flip the tofu. Brush the tofu with about half of the sauce and sprinkle over the rest of the spices. Cook for 3 minutes and flip the tofu over again.
  4. Brush the other side with the remaining sauce, sprinkle with scallion and cilantro, and serve.
