Spicy Grilled Veggie Skewers Recipe

Spicy Grilled Veggie Skewers feature a vibrant marinade blending cilantro, garlic, fish sauce, chili-garlic sauce, and black pepper, coating a mix of mushrooms, peppers, scallions, zucchini, and yellow squash. Grilled over medium heat, the vegetables develop tender, browned edges while retaining a fresh texture and a balanced spicy, herbaceous flavor.

Description

Spicy Grilled Veggie Skewers are prepared by marinating a variety of bite-sized vegetables including mushrooms, peppers, scallions, zucchini, and yellow summer squash in a paste made from fresh cilantro, garlic, fish sauce, chili-garlic sauce, with a splash of water and vegetable oil. The marinade infuses a bold, spicy, and herbaceous flavor, enhanced by freshly ground black pepper.

Once marinated for an hour, the vegetables are threaded onto skewers and grilled over medium heat, turning frequently to achieve even browning and tenderness without burning. This grilling method enhances the natural sweetness and texture of the vegetables while imparting slight smoky notes from the char.

These skewers can accompany rice or noodles or serve as a flavorful side dish. They keep well refrigerated for several days and can be gently reheated in the oven, on the grill, or in a skillet to maintain their texture.

Ingredients

Servings
  • 1 1/2 cups cilantro leaves packed
  • 8 cloves garlic peeled
  • 2 tablespoons fish sauce sub soy for vegan BBQ skewers
  • 1 tbsp water
  • 1 tsp black pepper freshly ground
  • 1 tablespoon Chili garlic sauce
  • 1/3 cup vegetable oil
  • 2 pounds vegetables cut into bite-sized pieces (any combination of mushrooms, peppers, scallion, zucchini, and yellow summer squash)

Instructions

  1. Place the cilantro, garlic, fish sauce, water, pepper, and chili-garlic sauce in the bowl of a food processor; pulse to form a paste.
  2. With the processor running, pour the oil through the lid spout in a slow stream. Use a spatula to scrape the marinade out of the processor and pour it over the vegetables. Toss well, cover, and refrigerate for 1 hour.
  3. Meanwhile, prepare a charcoal grill for medium heat. Thread the marinated vegetables onto metal skewers (or wooden skewers that have been soaked in water for 30 minutes).
  4. Grill the skewers for 12-15 minutes, turning frequently to prevent burning, until tender and browned around the edges.
  5. Serve with rice, noodles, or as a side dish to the main event!

Notes

  • Keep the marinated veggie skewers refrigerated in an airtight container for up to 3-4 days to preserve flavor and freshness.
  • While freezing is possible, it may alter the vegetables' texture, so fresh reheating in the oven or on the grill is preferred.
  • Reheat by placing skewers in a preheated 350°F oven for about 10 minutes or warm on the grill or skillet to avoid drying out.
