Spicy Ground Pork Stir Fry

This spicy ground pork stir fry features a Korean-inspired sauce combining gochujang and gochugaru for heat and depth, balanced by brown sugar, soy sauce, and mirin. Ground pork is sautéed with onions and mushrooms before coating with the sauce, then bright broccoli florets are briefly stirred in to maintain a slight crunch. The final dish has savory, umami layers with a spicy kick, complemented by toasted sesame oil and optional garnishes like sesame seeds and green onions.

Description

The Spicy Ground Pork Stir Fry centers on ground pork cooked in a pan with diced yellow onions and sliced mushrooms. The sauce mixture includes staple Korean ingredients like gochujang (fermented chili paste) and gochugaru (chili flakes), mixed with mirin, brown sugar, soy sauce, sesame oil, garlic powder, and salt, creating a rich, spicy-sweet-savory flavor profile. After coating the pork and vegetables in this sauce, fresh broccoli florets are added and cooked briefly to retain their texture.

The cooking method involves browning the pork and softening the vegetables before uniting them in the flavorful sauce, resulting in tender pork, tender mushrooms, and crisp-tender broccoli. The final touch of sesame oil adds a nutty aroma, while garnishes like sesame seeds and green onions provide extra texture and freshness.

This stir fry works well served alongside steamed rice or noodles as a quick and flavorful meal. Adjusting broccoli cooking time can suit personal preferences for crunchiness.

Ingredients

Servings

For the Sauce

  • 3 tbsp gochujang
  • 2 tsp gochugaru
  • 2 tbsp water
  • 2 tbsp mirin
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tsp garlic powder
  • 1 tsp salt

For the Pork Stir Fry

  • 1 tbsp neutral cooking oil generic cooking oil
  • 1 lb ground pork
  • 1 small yellow onion diced
  • 227 grams mushroom sliced
  • 2 cups broccoli cut to bite sizes, florets

Garnish (Optional)

  • green onions
  • sesame seeds

Instructions

  1. Combine the gochujang, gochugaru, water, mirin, brown sugar, soy sauce, sesame oil, garlic powder, and salt. Mix until smooth. Set aside.
  2. In a large non-stick skillet or wok, heat up the oil over medium-high heat. Once hot, add the ground pork and saute, stirring occasionally to break up the pieces, until mostly browned.
  3. Add in the diced onions and continue to cook for another minute before adding the sliced mushrooms. Continue to cook for another minute.
  4. Add the sauce and continue to cook until the mushrooms have decreased in size and everything is coated in the sauce, around 3 to 4 minutes.
  5. Add the broccoli florets to the pan and cook until they are at your desired texture. I like my broccoli to have a little bit of a bite to them so I only stir fry for a 1 to 2 minutes.
  6. Drizzle some sesame oil over top before serving.
  7. Garnish with sesame seeds and green onions if desired.
