Lamb Chunks:

  • 3 lbs lamb shoulder about 1 inch cubes, or stew meat
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 6 cloves garlic minced
  • 1/4 cup mint minced fresh
  • 1/4 cup parsley minced fresh
  • 1/3 cup olive oil

Fresh Harissa Sauce:

  • 2 cups hot chili any type, any color, any spice level you prefer, washed and stems removed, fresh
  • 3 cloves garlic fresh
  • lime juice of 1
  • 1 teaspoon kosher salt
  • 1/3 cup olive oil

Tahini Sauce:

  • 1/3 cup tahini paste sesame paste
  • 2 tablespoons water
  • lime about 3 tablespoons, juice of a huge
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin

Carrot Mint Salad

  • 3 cups carrot shredded
  • 1 cup mint chopped, fresh
  • 2 tablespoons tahini recipe above, sauce

Pita cones:

  • 6 pita bread thin

Extra Toppings:

  • iceberg lettuce shredded
