Spicy Jalapeño Margaritas for a Crowd

This recipe makes a large batch of Spicy Jalapeño Margaritas featuring a jalapeño-lime simple syrup balanced with tequila, fresh lime juice, and orange liqueur. The margaritas are served over ice with chili-lime salted rims and garnished with lime wedges and jalapeño slices, delivering a bright, tangy cocktail with a moderate spicy kick. The syrup is simmered to infuse jalapeño and lime peel flavors before combining with the spirits.

Description

To make Spicy Jalapeño Margaritas for a Crowd, sugar, water, jalapeño slices, and lime peel are simmered to create a spicy-sour simple syrup. This syrup is cooled and strained to remove solids, concentrating the flavors of fresh jalapeño and citrus zest. The syrup is mixed with blanco tequila, fresh lime juice, and orange liqueur in a pitcher, and optionally fresh jalapeño slices can be added for extra heat.

Glasses are prepared by salting rims with a blend of coarse salt and chili powder. Pouring the margarita mixture over ice in these glasses and garnishing with lime wedges and jalapeño slices creates a refreshing yet fiery cocktail. The combination of citrus and chili offers a lively balance between tart and heat.

This recipe scales well for large gatherings and offers flexibility to adjust the spice level by adding or omitting fresh jalapeño slices in the drink. The flavored syrup provides a rich, homemade element that distinguishes these margaritas from mixes.

Ingredients

Servings
  • 1 cup (199g) granulated sugar
  • 1 and 1/2 cups (340ml) water
  • 2 jalapeno pepper cut into slices
  • 2 inch long lime peel strips
  • 2 cups (454ml) blanco tequila
  • 2 cups (454ml) lime juice fresh
  • 1 and 1/4 cups (294ml) orange liqueur
  • 1 Tablespoon salt coarse
  • 1/2 teaspoon chili powder
  • lime for serving, wedges
  • jalapeño for garnish, slices
  • ice for serving

Instructions

  1. In a medium saucepan, combine the sugar, water, jalapeño, and  lime peel. Bring to a rolling simmer over medium-high heat and cook, stirring frequently, until the sugar has completely dissolved.
  2. Then reduce to medium-low and continue simmering, stirring occasionally, for 15 minutes. Remove from heat and set aside to cool for at least 30 minutes.
  3. Once cool, strain syrup into a large measuring cup, through a fine mesh strainer. Discard jalapeño peppers and lime peel. Set syrup aside until needed.
  4. In a large pitcher combine the tequila, fresh lime juice, and orange liqueur. Then pour in the simple syrup and stir well to combined. Add a few slices of jalapeño into the pitcher if desired.
  5. To salt the rim, combine the salt and chili powder in a shallow dish. Run the edge of a lime around a glass, then dip the glass into the chili salt combination. Repeat with all glasses.
  6. Fill glasses with ice, then pour margarita mix on top. Garish with a lime wedge and a few jalapeño slices, and serve at once!
