Spicy Peanut Beef with Broccoli Rice Meal Prep
Description
Spicy Peanut Beef with Broccoli Rice Meal Prep blends ground beef with a distinctively flavored peanut sauce made from peanut butter, garlic, oyster sauce, tamari, chicken stock, cornstarch, and sriracha lime seasoning. The broccoli is processed into a rice-like texture either by pulsing in a food processor or grating, then sautéed lightly or served as is. The beef is sautéed until browned, then simmered in the peanut sauce until fully cooked, allowing the flavors to infuse. This dish combines the heartiness of beef with the freshness and fiber of broccoli in an easy-to-portion meal prep format.
The peanut sauce offers a creamy and slightly spicy coating for the beef with umami notes from oyster sauce and depth from tamari and chicken stock. The broccoli rice adds a light texture contrast, making the dish feel balanced and satisfying. Adding crushed peanuts gives extra crunch, while a boiled egg boosts protein and richness when served.
Prepared in advance and stored in containers, this meal prep is suitable for quick lunches during busy days. It can be reheated and eaten alone or with additional sides if desired.
