Spicy Pineapple Cucumber Salad
Description
Spicy Pineapple Cucumber Salad integrates fresh cucumber pieces with thawed pineapple chunks and chopped cilantro to create a fresh base. The dressing is a blend of gochujang, a Korean fermented chili paste that provides moderate spiciness and umami, rice vinegar for acidity, and some sugar to balance flavors. After whisking these dressing ingredients, they are mixed with the salad components evenly.
The texture is crisp and juicy from the cucumber and pineapple, contrasted with the fresh bite of cilantro. The dressing ties these elements together with a tangy and mildly spicy layer enhancing the natural sweetness of the fruit. The salad can be eaten right away or refrigerated for later, with stirring before serving to redistribute the dressing.
This mixture is suitable as a light side dish or an accompaniment to grilled or spicy main courses, adding vibrant flavor and a cool balance to meals needing freshness and a mild kick.
