Spicy Pork Stir Fry (Jeyuk Bokkeum)

Spicy Pork Stir Fry, known as Jeyuk Bokkeum, features thinly sliced pork shoulder marinated in a robust mixture of gochujang, soy sauce, garlic, and other seasonings. The pork is quickly stir-fried with onions and scallions, resulting in a savory, spicy dish with tender and caramelized textures. This method allows the marinade flavors to deepen while creating a seared finish. It works well for a flavorful main course served with rice or vegetables.

Description

Spicy Pork Stir Fry (Jeyuk Bokkeum) brings together thin slices of pork shoulder marinated in a blend of Korean spices such as gochujang, gochugaru, soy sauce, garlic, mirin, brown sugar, and plum extract. The marinade infuses the pork with a balanced mix of umami, sweetness, and heat. Cooking involves stir-frying the marinated pork along with onions and scallions in a hot skillet, allowing the meat to sear on each side quickly before stirring. The onions can be caramelized further in the pan if preferred, adding sweetness that contrasts the spicy sauce.

The dish has a rich, textured profile from the tender meat and softened vegetables, accompanied by layers of bold flavors from the marinade ingredients. It is commonly served hot alongside steamed rice to complement the spiciness. The preparation includes marinating times ranging from 10 minutes up to overnight to enhance the flavor absorption.

Ingredients

Servings
  • lbs pork shoulder thinly sliced, or pork butt
  • 1 small onion sliced
  • 3-4 bunches scallions cut into 3
  • 1 tbsp neutral cooking oil divided, generic cooking oil

For the Marinade

  • 6 tbsps gochujang
  • ½ tbsp gochugaru
  • 5 tbsps soy sauce
  • 2 tbsp mirin
  • 5 tbsp brown sugar
  • 2-3 cloves garlic minced
  • 1 tbsp sesame oil
  • ½ tsp black pepper
  • 1 tbsp plum extract or additional sugar

Instructions

  1. Add all the marinade ingredients into a bowl with the pork along with the onions and green onions.
  2. Mix everything together until fully combined. Set aside in the fridge for 10 to 30 minutes or overnight to marinate.
  3. In a large cast-iron skillet, heat oil over medium-high heat and add up to half of the marinated mixture in a single layer.
  4. Allow the pork to cook for a few seconds untouched before using a pair of chopsticks to stir-fry the meat. Let sit for another few seconds to allow the other side to sear.
  5. Stir fry until the pork is no longer pink and transfer to a plate. Continue with the rest of the pork. Keep the onions in the pan if you want them more caramelized.
