Spicy Tomato Jam Recipe

Spicy Tomato Jam is made by roasting halved ripe tomatoes coated with olive oil and salt until very soft, then blending them with garlic, ginger, chili flakes, soy sauce, palm sugar, and white vinegar. The mixture is simmered to thicken into a savory, sweet, and spicy condiment.

Description

This Spicy Tomato Jam uses ripe tomatoes roasted skin side down with olive oil and sea salt until they soften, concentrating their sweetness. After cooling, the tomatoes are blended with ingredients including garlic, grated ginger, chili flakes or bird's eye chilies for heat, soy sauce for umami, palm sugar for sweetness, and white vinegar for acidity. The puree is then cooked over medium heat for about ten minutes, allowing flavors to meld and the jam to thicken.

The final product is a balanced condiment combining sweet, spicy, tangy, and savory elements, ideal for spreading on breads, serving alongside cheeses, or complementing grilled meats. Its thick texture and concentrated flavor come from the roasting and simmering steps.

The roasting step is crucial to soften the tomatoes and develop their natural sugars, enhancing depth. Adjust chili flakes according to spice preference. Cooling before blending prevents overheating the blender and preserves flavor brightness.
