  • cups chicken shredded, cooked
  • 14 ounces artichoke hearts drained and chopped (1 can)
  • 1 cup cream cheese softened (1 brick)
  • ½ cup mayonnaise
  • ½ cup sour cream or plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt or to taste
  • ½ teaspoon black pepper or to taste, ground
  • 2 cups mozzarella cheese divided, freshly shredded
  • 1 cup Parmesan Cheese divided, freshly grated
  • 4 ounces spinach about 3 cups, fresh

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9x13-inch baking pan with nonstick spray.
  2. Place the shredded chicken in an even layer inside the casserole dish, then distribute the artichoke hearts on top.
  3. In a large bowl, use an electric hand mixer to mix the cream cheese, mayonnaise, sour cream, mustard, garlic, onion powder, salt, and pepper. Fold in 1 cup of mozzarella, ½ cup of Parmesan, and spinach, stirring until combined.
  4. Pour and spread the mixture evenly on top of the chicken breast. Sprinkle the top with the remaining cheeses.
  5. Bake for 25-30 minutes, until the casserole is warmed through and the cheese is golden brown and bubbly.
  6. Broil the top for 2-3 minutes for a nice browned top.
  7. Serve hot over rice, cauliflower rice, or pasta, if desired, or enjoy alone.

Notes

  • Storage: Store spinach artichoke chicken casserole in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.
  • Be sure to fully drain the artichokes to avoid a watery casserole.
  • If using frozen spinach, let it thaw completely and drain off the excess liquid.
