Spinach Artichoke Chicken Pasta

Ingredients
- 8 ounces penne pasta
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 Tablespoon olive oil
- 3 cloves garlic (minced)
- 1 can artichoke hearts (14 ounces, drained and chopped)
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 Cup grated Parmesan cheese
- 1/2 teaspoon black pepper
- 1 teaspoon salt

Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken and cook until no longer pink, about 5-7 minutes.
- Add minced garlic and cook for another minute.
- Stir in artichoke hearts and spinach. Cook until spinach wilts.
- Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
- Add Parmesan cheese, salt and pepper and stir until melted.
- Toss in cooked pasta and stir to coat with the sauce.
- Serve warm and enjoy!
Notes
- Penne works well, but you can use any short pasta like rotini or fusilli.
- For a lighter version, use half-and-half instead of heavy cream.
- Refrigerate any leftovers in an airtight container for up to 5-6 days.
