Spinach Artichoke Chicken Recipe

  • 4 chicken breast about 2 pounds, small, boneless, skinless
  • 3 cups spinach chopped, fresh leaves
  • 12 ounces artichoke hearts drained and roughly chopped, marinated
  • ½ cup Parmesan Cheese freshly grated
  • cup mayonnaise
  • cup sour cream
  • 2 garlic minced, cloves
  • 8 ounces mozzarella cheese grated
  • kosher salt
  • black pepper freshly ground

Instructions

  1. Preheat the oven to 375°F.
  2. Season chicken breasts with salt and pepper on both sides. Arrange in a 9x13-inch baking dish.
  3. Combine spinach, artichokes, parmesan cheese, mayonnaise, sour cream, and garlic. Spread on top of chicken breasts. Top with grated mozzarella cheese.
  4. Bake for 30-35 minutes in the preheated oven until a digital meat thermometer inserted into the thickest part of the chicken breast registers the internal temperature at 165°F.
