Spinach Lasagna Roll ups
Description
For Spinach Lasagna Roll ups, lasagna noodles are boiled and dried, then spread with a ricotta cheese blend mixed with thoroughly drained spinach, Parmesan, egg, garlic, Italian seasoning, and optional cooked chicken. Each noodle is carefully rolled to maintain the filling inside and arranged snugly in a sauced casserole dish. The rolls are topped with additional marinara sauce and mozzarella cheese before being covered and baked at 350°F until cheese melts and the dish is set.
The dish balances creamy, cheesy filling texture with the slight firmness of noodles and the bright acidity of marinara. Garlic and Italian herbs add savory depth, while chicken adds protein and extra texture when included. Serving with extra sauce and fresh basil enhances freshness and presentation.
Adding chicken increases calories and nutritional points, so adjust dietary calculations accordingly.
Ingredients
- 9 lasagna noodles
- 1 (10 ounce package) spinach frozen, chopped, thawed and completely drained
- 1 (15 ounce container) ricotta cheese
- 1/2 /2 cup Parmesan Cheese grated
- 1 egg
- 1/2 /2 teaspoon garlic minced
- 1/2 /2 teaspoon Italian seasoning dried
- salt
- black pepper
- optional optional 1 chicken breast cooked and diced
- 32 oz marinara sauce
- 9 Tablespoons mozzarella cheese shredded, part skim
Instructions
- Preheat oven to 350°. Boil lasagna noodles according to package directions. Make sure you drain the spinach well. Combine spinach, ricotta, Parmesan cheese, egg, garlic, Italian seasonings, chicken, and salt and pepper in a medium bowl. Pour about 1 cup sauce on the bottom of a 9 x 13 casserole dish.
- Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry by patting them with a paper towel. Take 1/3 cup of ricotta cheese mixture and spread evenly over a noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
- Ladle sauce over the noodles in the baking dish and top each one with 1 Tablespoon of mozzarella cheese. Cover baking dish tightly with aluminum foil and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
- To serve, ladle a little sauce on the plate and top with lasagna roll and fresh basil.
Notes
- Drain spinach thoroughly before mixing to prevent watery filling.
- Include cooked, diced chicken optionally for added protein, adjusting calorie counts if desired.
