Ingredients

  • 3 yellow summer squash cut into thin strands with a vegetable peeler or spiral slicer (spiralizer) or julienned, large
  • 1 celery thinly sliced, large stalk
  • 1 tablespoon basil finely chopped, fresh
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons lemon juice freshly squeezed
  • 1 teaspoon mint finely chopped, fresh
  • 1 lemon zest ½ teaspoon, freshly grated
  • 1 cumin ¼ teaspoon, ground
  • crushed red pepper flakes pinch
  • salt to taste, sea salt; freshly ground black pepper
