Spiralizing the turnips, potatoes, and carrots creates long noodles that provide an interesting texture different from traditional diced vegetables. The ground turkey is cooked with onion, garlic, and seasoned with salt and pepper, then simmered briefly with half and half, milk, and fresh herbs to create a custard-like base. Combining the vegetable noodles with the turkey mixture and topping with shredded gruyere and scallions adds richness and a slight nuttiness.

  • 1/2 cup half and half
  • 1/2 cup milk skim
  • 1 1/4 tsp kosher salt (divided)
  • 2 thyme sprigs, fresh
  • 1 rosemary fresh sprig
  • 2 teaspoons butter
  • 1 onion chopped, small
  • 1 1/4 lb ground turkey 93% lean
  • 4 garlic diced, cloves
  • 1 pound turnip 2, peeled
  • 3 oz carrot 1/2 of large
  • 1 potato 8 oz, medium, peeled
  • 3 oz gruyere cheese (shredded)
  • 1/4 cup scallions (chopped)

Instructions

  1. Preheat oven to 375 degrees. Spray a 14-inch oval casserole dish with cooking spray.
  2. Spiralize the carrot, turnips and potato with the thickest noodle setting of your spiralizer, cutting the spirals into 8-inch lengths.
  3. In a small pan bring the half and half, milk, ½ tsp salt, thyme and rosemary to a simmer over medium-low heat for 5 minutes, set aside.
  4. In a large nonstick pan, melt the butter and saute the chopped onion and garlic in butter for 5 minutes, add 3/4 tsp salt and pepper.
  5. Add the ground turkey and cook on medium-high heat until browned, approximately 10 minutes.
  6. Remove thyme and rosemary leaves from milk and pour milk mixture onto turkey, simmer 3 minutes.
  7. In a large working bowl combine the spitalized turnips, potatoes and carrots along with meat and the milk mixture, combine well.
  8. Pour into a casserole dish, top with scallions, and gruyere cheese.
  9. Cover with foil and bake 1 hour, uncover and broil on low for 5 minutes, or until golden on top.
