Ingredients

  • 6 tablespoons butter divided, unsalted
  • 2 leek white and light green parts only, sliced
  • 1 cup arborio rice
  • ¼ cup white wine dry
  • 3 cups chicken stock plus more as needed, warmed, low sodium; or vegetable stock
  • 1 ½ cups radishes quartered
  • 1 ½ cups asparagus chopped
  • salt to taste, freshly cracked black pepper
  • black pepper to taste, freshly cracked black pepper
  • 1 teaspoon lemon from about ½ lemon, zest
  • ¾ cup peas thawed, frozen
  • 1 cup Parmesan Cheese plus more for garnish, grated
  • ½ cup mascarpone cheese
  • 1 tablespoon chives plus more for garnish, chopped

Notes

  • Total amount of seasoning will depend on the saltiness of your stock. Taste and adjust as needed.
  • If you are cooking at a high altitude, your rice may take a little bit longer to cook and may require a bit more liquid.
