Ingredients
- 6 tablespoons butter divided, unsalted
- 2 leek white and light green parts only, sliced
- 1 cup arborio rice
- ¼ cup white wine dry
- 3 cups chicken stock plus more as needed, warmed, low sodium; or vegetable stock
- 1 ½ cups radishes quartered
- 1 ½ cups asparagus chopped
- salt to taste, freshly cracked black pepper
- black pepper to taste, freshly cracked black pepper
- 1 teaspoon lemon from about ½ lemon, zest
- ¾ cup peas thawed, frozen
- 1 cup Parmesan Cheese plus more for garnish, grated
- ½ cup mascarpone cheese
- 1 tablespoon chives plus more for garnish, chopped
Notes
- Total amount of seasoning will depend on the saltiness of your stock. Taste and adjust as needed.
- If you are cooking at a high altitude, your rice may take a little bit longer to cook and may require a bit more liquid.
