Description
Spritz cookies combine room-temperature unsalted butter with sugar and salt, creamed together until smooth. Incorporating an egg along with vanilla and almond extracts provides a fragrant and rich flavor. The dough is then mixed with all-purpose flour to form a pliable consistency suitable for pressing shapes with a cookie press onto ungreased, unlined baking sheets.
The baking process is brief, approximately eight minutes, during which the bottoms start to turn a gentle golden color without browning fully, preserving a tender texture. These cookies have a delicate crumb and buttery taste enhanced by the almond and vanilla. Food coloring can be added for different colors, and sprinkles can be applied either before or, to avoid melting and color bleeding, after baking.
Allowing cookies to firm slightly before transferring to a cooling rack helps maintain their shape. Decorating with icing is recommended only after the cookies have completely cooled to ensure smooth application and adherence of embellishments.
Ingredients
- 1 cup unsalted butter 226g, room temperature
- 3/4 cup granulated sugar (150g)
- 1/2 tsp salt
- 1 egg large
- 1 tsp vanilla extract
- 1 tsp almond extract
- 2 1/4 cups all-purpose flour 293g
Instructions
- Preheat oven to 350F.
- Cream butter, salt, and sugar together in a stand mixer or with an electric whisk. Add the egg, almond extract, and vanilla until combined then scrape down the bowl.
- If tinting the dough you should mix the food coloring in now then add the flour and mix until combined.
- Fill your cookie press and choose a pattern then press cookies onto an unlined and ungreased baking sheet.
- You can decorate with sprinkles before or after baking see notes. Bake at 350F for about 8 minutes or until the bottoms are JUST starting to turn golden.
Notes
- Use an unlined and ungreased baking sheet to allow cookies to release easily after pressing.
- Add food coloring a little at a time, with gel food coloring recommended to maintain dough consistency.
- Sprinkles may melt or bleed color if placed before baking; decorate afterward for best results using corn syrup or icing as adhesive.
- For icing, cool cookies completely before decorating and avoid applying sprinkles before baking.
- Watch baking time closely to prevent browning; cookies should only have slightly golden edges.
- Let cookies firm for a few minutes post-baking before moving them to a rack to cool fully.
