Starbucks Morning Buns (Copycat)

These Starbucks Morning Buns are a copycat recipe that uses a sweet yeasted dough rolled with butter and sugar, resting overnight to develop flavor. The dough is shaped into a log, sliced, and baked until golden brown with a soft, sweet, and slightly sticky texture. The multiple layers of sugar and butter caramelize during baking, creating a tender and indulgent pastry reminiscent of the original Morning Bun.

Description

The Starbucks Morning Buns copycat recipe begins with a dough made from water, yeast, eggs, honey, butter, flour, and salt. Combining these ingredients and allowing the dough to rest overnight helps develop flavor and texture. After rolling out the dough into a rectangle, it is brushed with melted butter and sprinkled generously with sugar, then rolled into a log and sliced into equal pieces. These are then placed in a baking dish with space between to allow rising and spreading during baking. Baked at 350°F, the buns take on a golden color with a tender crumb and a caramelized sugar crust.

The resulting buns are soft and sweet, with distinct layers from the rolled dough and butter-sugar filling. They can be enjoyed on their own or with coffee or tea for breakfast or a snack. The method of letting the dough rest overnight not only develops complexity in taste but also helps with easy shaping in the morning.

Ingredients

Servings
  • 1 cup water lukewarm
  • 1 tsp yeast dry
  • 1/2 tsp salt
  • 2 egg
  • 1/4 cup honey
  • 1/4 cup butter melted, unsalted
  • 3 3/4 cup all-purpose flour
  • 1 cup sugar for filling
  • 1/2 cup butter melted, unsalted

Instructions

  1. Combine all the ingredients together in a large bowl, minus the flour. Whisk until well combined.
  2. Using the spatula, fold in the flour one half at a time. Cover with plastic wrap and let dough sit overnight at room temperature.
  3. Place dough on a well-floured surface.
  4. Roll out the dough into a rectangular shape. Spread melted butter over it, followed by a generous sprinkling of sugar. Roll the dough into a log and seal the end by pinching it with your fingertips.
  5. Cut the dough into even-sized pieces with a sharp knife (about 15 pieces). Grease a deep baking dish with butter.
  6. Place the buns into the baking dish. They will have plenty of space between, but will rise and spread during the baking process (see photo).
  7. Preheat oven to 350°F and bake for 35-40 minutes, or until golden brown.
