Starbucks Pumpkin Scones Copycat Recipe

The Starbucks Pumpkin Scones Copycat Recipe recreates the spiced scones that blend pumpkin puree with warming fall spices like cinnamon, cloves, ginger, and nutmeg. The dough is enriched with butter and baked to yield tender, crumbly wedges topped with a smooth vanilla glaze and spiced drizzle. These scones offer a comforting balance of sweetness and spice, ideal for seasonal breakfasts or snacks.

Description

This copycat recipe captures the distinctive flavor of Starbucks pumpkin scones by combining all-purpose flour, brown sugar, and spices including cinnamon, cloves, ginger, nutmeg, and baking soda with pumpkin puree and cold butter to form a soft dough. After mixing, the dough is gently kneaded, rolled into an 8-inch circle, and cut into eight wedges. Baking at 400 degrees Fahrenheit results in scones with a delicate crumb and subtle pumpkin flavor.

The scones are finished with two types of glaze: a simple milk and confectioners' sugar glaze and an additional spiced glaze incorporating cinnamon, cloves, ginger, and nutmeg. The combination adds a sweet and aromatic topping that complements the soft inside and lightly crisp edges of the scones.

These scones pair well with coffee and can be served warm or at room temperature. Preparing the dough carefully to avoid overmixing helps maintain the tender texture Starbucks is known for. The recipe requires standard baking ingredients and produces a batch of eight scones suitable for sharing or storing.

Ingredients

Servings
  • 2 cups all-purpose flour
  • cup brown sugar packed
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¾ teaspoon cloves ground
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter cut into cubes, unsalted
  • ½ cup pumpkin puree
  • 3 tablespoons milk
  • 1 egg large
  • 2 teaspoons vanilla extract

For the glaze

  • 1 cup confectioners' sugar
  • 2 tablespoons milk

For the spiced glaze

  • 1 cup confectioners' sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon cloves ground
  • ¼ teaspoon ground ginger
  • teaspoon nutmeg
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
  2. In a large bowl, combine flour, sugar, cinnamon, baking powder, cloves, ginger, nutmeg, baking soda and salt. Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
  3. In a large glass measuring cup or another bowl, whisk together pumpkin puree, milk, egg and vanilla. Pour mixture over dry ingredients and stir using a rubber spatula until a soft dough forms.
  4. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pill, roll the dough into an 8″ circle, about 1-inch thick, and cut into 8 wedges.
  5. Place scones onto the prepared baking sheet. Place into oven and bake for 12-15 minutes, or until a tester inserted in the center comes out clean.
  6. When the scones are done, cool for 10 minutes and spoon the glaze on each scone before drizzling with spiced glaze.
  7. Allow glazes to set before serving.

For the glaze
