Ingredients

Servings

FOR THE STEAK & MARINADE

  • 1 pound beef use chuck, brisket, or flank steak, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 3/4 teaspoon baking soda (or use cornstarch)

FOR THE FRIED RICE

  • 2 tablespoons sesame oil or use vegetable oil
  • 1 red bell pepper chopped
  • 5 green onions chopped
  • 3 cloves garlic minced
  • 4 cups rice See Notes, day old, cooked
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon Chili garlic sauce or use sriracha or hot sauce for spicy
  • 2 egg scrambled, large

Instructions

  1. Add the beef to a large bowl. Whisk together the soy sauce, sesame oil, garlic, and baking soda, then toss with the meat to coat evenly. Marinate at least 1 hour or overnight for more flavor penetration.
  2. Heat the sesame oil in a wok or large pan over high heat.
  3. Add the beef and bell pepper and stir fry for 2 minutes, getting all sides.
  4. Add the green onion and garlic and stir fry rapidly for 1 minute.
  5. Add the rice, soy sauce, fish sauce, sesame oil, and chili-garlic sauce. Stir fry for 2 minutes, until the rice gets slightly toasty.
  6. Move the rice aside and pour in the eggs. When it starts to set, gently stir until you get large curds, then stir them throughout the rice. Serve.

Notes

  • Day old rice is ideal for stir frying, as it is dried out and will not steam in the pan.
