Steak Frites

Steak Frites pairs a seasoned strip steak cooked to preference with crispy French fries and a dollop of maître d'hôtel butter for richness. The simple seasoning and high-heat cooking method yield a seared crust on the steak while preserving juiciness inside. Serving over fries makes this a classic French bistro-style dish combining savory meat, buttery comfort, and crispy potatoes.

Description

Steak Frites features thick cut strip steaks seasoned with a steakhouse-style rub and seared in a hot cast iron or heavy skillet for a few minutes per side. The high heat and seasoning develop a flavorful crust. The steaks rest briefly to reabsorb juices before plating. French fries cooked separately form a crisp bed for the steak, providing a textural contrast. A spoonful of maître d'hôtel butter—compound butter with herbs and butter—is added on top to melt and enhance the flavor.

The dish highlights the rich, savory taste of the steak enhanced by herbs and butter, combined with the crunch of fries. The method allows controlling doneness by varying cooking time. Ventilation is recommended since high heat searing can generate smoke.

This recipe suits an indulgent lunch or dinner, pairing well with a salad or mustard-based sauces. It presents a classic steakhouse experience in a home kitchen. Serving immediately after cooking keeps the steak tender and fries crisp.

Ingredients

Servings
  • 2 strip steak thick cut
  • 2 tablespoons steak rub Steakhouse style
  • 2 cups French Fries , cooked
  • 2 tablespoons maître d'hôtel butter

Instructions

  1. Season the steaks with the Steakhouse Steak Rub and set aside.
  2. Heat a cast iron pan or heavy skillet over high heat until smoking. Make sure you turn on the vent or have proper ventilation. If the skillet is not nonstick or cast iron, add a small amount of high smoke point oil like peanut oil.
  3. Add the seasoned steaks, cooking for 2-3 minutes on each side, longer if you like a medium-well done steak. This will also be highly dependent on the thickness of your steaks. Remove and allow to rest for 5.
  4. To plate, place French fries on the bottom, top with your steak and finally compound butter.
