Steak Gyros

Steak Gyros feature marinated flank or skirt steak grilled to medium-rare and sliced thin, served in warm pocketless pita bread with shredded romaine, thinly sliced red onions and tomatoes, and drizzled with creamy tzatziki sauce. The marinade blends olive oil, oregano, red wine vinegar, and garlic for a herbaceous and tangy flavor that infuses the beef. Fresh vegetables and cool tzatziki provide crisp and creamy contrast for a classic gyro experience at home.

Description

Steak Gyros start with flank or skirt steak marinated in olive oil, oregano, red wine vinegar, and grated garlic. This mixture imparts a fragrant, Mediterranean herb and garlic flavor with brightness from the vinegar. The meat is allowed to marinate for at least 30 minutes, up to 4 hours, developing tender, flavorful qualities.

After marinating, the steak is grilled or seared to medium-rare, developing a golden crust and juicy interior. Resting the meat before slicing across the grain ensures the strips remain tender. These slices combine with shredded romaine lettuce, thin red onion slices, and fresh tomato slices tucked into warm, pocketless pita breads.

Tzatziki sauce, characterized by creamy yogurt, cucumber, and garlic flavors, is drizzled over the assembled gyros, adding cool freshness that balances the savory beef and herbs. These gyros offer a handheld meal that contrasts juicy and tender steak with crisp vegetables and creamy sauce, suitable for lunch or dinner.

Leftover gyros can be stored in an airtight container for up to three days and reheated gently to maintain texture without drying out.

  • 1 tablespoon red wine vinegar
  • 2 garlic grated, cloves
  • 1 ½ pounds flank steak trimmed, or skirt steak

  • tzatziki sauce

Instructions

  1. In a large, shallow bowl, mix oil, oregano, vinegar, and garlic. Add steak and toss to fully coat. Cover with plastic wrap and marinate at least 30 minutes or up to 4 hours, flipping the steak halfway through. Remove from fridge at least 1 hour prior to cooking.
