Steak Marinade

This Steak Marinade blends soy sauce, Coca-Cola, lemon juice, canola oil, Worcestershire sauce, and garlic to tenderize and flavor cubed ribeye or tri-tip steaks. Marinating the meat for 24 hours allows the ingredients to infuse the beef, resulting in a rich, balanced taste. Grilling the skewered steak cubes develops a caramelized exterior while keeping the inside juicy. Resting the meat after grilling helps retain its juices before serving.

Description

The Steak Marinade recipe combines savory soy sauce with the sweetness of Coca-Cola made from cane sugar, fresh lemon juice for acidity, canola oil, Worcestershire sauce, and minced garlic to create a flavorful soaking liquid for the meat. The marinade softens the fibers and imparts layered flavors over a full day. Using ribeye steaks trimmed and cut into cubes or tri tips works well for skewering.

After marinating, the meat is threaded onto soaked wooden skewers and grilled to the desired doneness. Depending on the heat, grilling times range from 1-6 minutes per side. Holding the meat under foil for 5-10 minutes post-grilling allows the juices to redistribute, making the steak tender and flavorful.

This marinade technique yields grilled steak cubes with a balance of sweet, savory, and tangy notes, suitable for serving as a main dish or for kabobs. The method emphasizes patience in marinating and careful grilling to get the best texture.

Ingredients

Servings
  • 1 cup soy sauce
  • 18 oz. Coca-Cola I used the mexican version made with cane sugar and would recommend to not use diet soda for this. Ever ever ever
  • 1/4 cup lemon juice fresh
  • 1/2 cup canola oil
  • 2 tablespoons Worcestershire sauce
  • 3 cloves garlic minced
  • 3 lbs meat I used ribeye steaks that I trimmed the extra fat from and cut up into cubes; tri tips would also be great!

Instructions

  1. In a large a Tupperware container, whisk together all ingredients of meat marinade. Add in the meat and stir to coat all of it in the marinade. Cover tightly with a lid and marinate 24 hours.
  2. To grill, soak wooden skewers in water for 1 hour, then skewer meat onto wet sticks. Grill anywhere from 1 minute to 6 minutes per side, depending on how hot your grill is and how you like your meat cooked. Remove from the grill to a clean plate, cover with foil and rest 5-10 minutes before serving.
