Description
This fajita-inspired Steak Quesadilla starts by sautéing diced bell pepper and onion in oil until softened. Pre-cooked steak cubes are then added to warm and gain a slight golden color before being removed. A separate skillet with butter is heated, and a tortilla is placed in it. Cheese is layered over half, followed by the steak and vegetable mix, then more cheese before folding the tortilla over. The quesadilla cooks until the bottom side is golden, then flips to cook the other side similarly. Repeating this process for remaining quesadillas ensures an even crispy crust and melted filling.

Ingredients
- 6 flour tortillas
- 2 cups Mexican cheese
- 1 tbsp neutral cooking oil olive or avocado, generic cooking oil
- 1/2 bell pepper diced, large
- 1/2 onion diced, medium
- 1 lb steak cooked, cut into cubes
- 2 tbsp butter unsalted
Instructions
- Preheat a skillet with oil over medium heat. Add in the diced bell pepper and onion and sauté them for another 5 minutes or until veggies soften.
- Add the sliced, precooked steak to the veggies and toss until golden. Set the steak and veggie mixture aside.
- Into a clean skillet, add a bit of butter and place a tortilla on top. On half of the tortilla, add the cheese, steak mixture, and more cheese. Fold the tortilla over.
- Once the tortilla is golden, flip it over and cook for a few more minutes until the other side is also golden. Repeat the same steps with the rest of quesadillas.
- Serve while the quesadillas are still warm and the cheese is melty. Enjoy!
