Steak with Peppercorn Sauce

This recipe prepares fillet steaks cooked to preference and accompanied by a creamy peppercorn sauce made from butter, flour, beef broth, milk, and crushed peppercorns. The steaks have a seared exterior and tender interior, balanced by a sauce with a smooth texture and a mild spicy kick from the peppercorns. It is served commonly with mashed potatoes and greens.

Description

Steak with Peppercorn Sauce involves seasoning fillet steaks before quickly pan-searing them to the desired doneness, leaving them juicy with a slightly crisp surface. The pan is then used to make a sauce by creating a roux with butter and flour, to which beef broth and milk are added and whisked until thickened. Crushed peppercorns incorporated into the sauce add a gentle heat and aroma distinctive of peppercorn sauces.

This sauce pairs well with the delicate flavor of fillet steak, complementing rather than overpowering the meat. The dish is traditionally served alongside mashed potatoes and vegetable greens, balancing richness with starch and freshness.

The recipe offers US measurements and the servings can be adjusted easily. Resting the steaks after cooking helps retain juices for a tender bite.

  5. Pour in the broth and milk, and continue to whisk until the sauce thickens.

  7. Serve the fillet steaks with the sauce, mash and greens.

Notes

  • Use crushed peppercorns fresh for best flavor in the sauce.
  • Let steaks rest after cooking to keep them moist and tender.
