Steak with Peppercorn Sauce
Description
Steak with Peppercorn Sauce involves seasoning fillet steaks before quickly pan-searing them to the desired doneness, leaving them juicy with a slightly crisp surface. The pan is then used to make a sauce by creating a roux with butter and flour, to which beef broth and milk are added and whisked until thickened. Crushed peppercorns incorporated into the sauce add a gentle heat and aroma distinctive of peppercorn sauces.
This sauce pairs well with the delicate flavor of fillet steak, complementing rather than overpowering the meat. The dish is traditionally served alongside mashed potatoes and vegetable greens, balancing richness with starch and freshness.
The recipe offers US measurements and the servings can be adjusted easily. Resting the steaks after cooking helps retain juices for a tender bite.
Ingredients
- 4 fillet steak
- 25 g butter
- 1 ½ tablespoon flour
- 250 ml beef broth
- 100 ml milk
- 2 tablespoon peppercorns
- ¼ teaspoon salt
- 1 tablespoon vegetable oil
Instructions
- Season the steaks with salt.
- Heat up the oil, and cook each steak on both sides for 1-2 minutes depending if you like them rare, medium or well done.
- Remove from the pan and set aside to rest.
- In the same pan, melt the butter, add the flour and whisk well to get a smooth paste.
- Pour in the broth and milk, and continue to whisk until the sauce thickens.
- Add the peppercorns to a zip lock bag, and use a rolling pin to crush them slightly, then add them to the sauce, and give it a good stir.
- Serve the fillet steaks with the sauce, mash and greens.
Notes
- Adjust steak cooking time based on preferred doneness to maintain desired texture.
- Use crushed peppercorns fresh for best flavor in the sauce.
- Let steaks rest after cooking to keep them moist and tender.
- Servings and measurements can be switched between metric and US customary as needed.
