Steamed Chicken with Black Bean Sauce
Description
This dish begins by cutting chicken drumstick meat into bite-sized pieces and marinating them with Chinese cooking wine, light soy sauce, optional oyster sauce, sugar, white pepper, chopped spring onions, and sliced ginger. The marinated chicken is set aside for 30 minutes to absorb the flavors. After discarding the spring onion and ginger slices, cornstarch is added to the chicken to help tenderize and enhance texture.
Garlic and fermented black beans are chopped and spread over the chicken, which rests on a bed of wood ear and other mushrooms. Hot vegetable oil, heated until smoky, is poured evenly over the garlic and bean topping to release their aroma and flavor. The assembled dish is then steamed over high heat for 15 minutes until the chicken is cooked through, resulting in tender meat infused with savory, slightly pungent notes from the black beans and aromatics.
Upon steaming completion, additional light soy sauce and sesame oil may be sprinkled on top for extra seasoning. The dish is best served hot alongside steamed rice to complement its rich, earthy flavors.
Ingredients
- 4 chicken drumstick remove the bones and cut into small pieces
Marinating Ingredients
- 1 tbsp. Chinese cooking wine
- 1 tbsp. soy sauce light
- 1/2 tbsp. oyster sauce , optional
- 1/4 tsp. sugar
- 1/4 tsp. white pepper powder
- 2 spring onions
- 5 ginger sliced
Others
- 1 tbsp. cornstarch
- 4 garlic finely chopped, cloves
- 1 tbsp. fermented black beans
- 2 tbsp. vegetable oil heat until smoky

Instructions
- Cut chicken meat into small pieces and then marinating with all the marinating ingredients namely light soy sauce, sugar, white pepper, oyster sauce, Chinese cooking oil, spring onion and ginger slices. Mix well and set aside for 30 minutes.
- Then discard the spring onion sections and ginger slices. Add cornstarch in and mix well.
- Finely chop garlic and then roughly cut fermented black beans. Place the mushrooms at the bottom, and then top with chicken. Spread the garlic and fermented black beans evenly over the chicken. Heat around 2 tablespoons of cooking oil until smoky and pour evenly over the garlic. Mix well.
- Steam with high fire for 15 minutes.
- Transfer out, sprinkle some extra light soy sauce and sesame oil to create some naughty flavors. Serve with steamed rice.
