Description

This Stewed Cabbage recipe uses shredded cabbage that is salted and massaged to draw out moisture before cooking. Red bell pepper adds a subtle sweetness and color contrast. The cabbage, peppers, and onions are cooked slowly in vegetable oil, with water added to create a stewing environment until the cabbage turns very tender.

Tomato paste enhances richness and adds a gentle acidity, balanced by black pepper and fresh chopped dill which imbues a fragrant herbal note. Bay leaves contribute depth to the overall flavor during the cooking process.

Ingredients

  • 1 white cabbage I used savoy cabbage, but the regular white one can do, medium
  • 2 tablespoon vegetable oil
  • 1 red bell pepper
  • 2 tablespoon tomato paste
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 bay leaf
  • 1 tablespoon dill freshly chopped

Instructions

  1. Shred the cabbage, sprinkle salt over it and rub it with your hands. Set aside for 10 minutes.
  2. Meantime, heat up the oil in a large pan, and fry the onions on a low to medium heat until golden.
  3. Add the peppers and cabbage in batches if necessary to allow it to soften - once it's soft, it will reduce its volume.
  4. Keep stirring with a wooden spoon, when the cabbage is starting to soften, cover it with water and leave to cook on a medium heat until very tender.
  5. Season with more salt if needed, add the black pepper, tomato paste and dill and cook for a further 5 minutes.
  6. Serve hot with polenta and chilli peppers.
