If you're looking for the freshest, most delicious summer salad imaginable, this Stone Fruit Tomato Caprese Salad is IT! The fabulous Sweet Basil Dressing is the crowning glory!

Ingredients
- 2 peach pitted and sliced, medium ripe
- 2 nectarine pitted and sliced, medium ripe
- 2 plums pitted and sliced, medium ripe
- ½ cup sweet cherries pitted and halved
- 2 tomato sliced (red, yellow or any color in between, medium, ripe
- 1 cup tomatoes halved, cherry or grape
- ½ -¾ cup mozzarella cheese perlini or ciliegine, or diced fresh mozzarella, small, fresh balls
- ¼ cup pine nuts toasted
- basil vinaigrette sweet
- black pepper freshly ground
Instructions
- Arrange all fruit (yes tomatoes are actually a fruit) and fresh mozzarella on a platter. Drizzle with the Sweet Basil Vinaigrette. Sprinkle with the toasted pine nuts and fresh ground black pepper. Serve extra dressing at the table.
