Stone Fruit Tomato Caprese Salad

Ingredients

Servings
  • 2 peach pitted and sliced, medium ripe
  • 2 nectarine pitted and sliced, medium ripe
  • 2 plums pitted and sliced, medium ripe
  • ½ cup sweet cherries pitted and halved
  • 2 tomato sliced (red, yellow or any color in between, medium, ripe
  • 1 cup tomatoes halved, cherry or grape
  • ½ -¾ cup mozzarella cheese perlini or ciliegine, or diced fresh mozzarella, small, fresh balls
  • ¼ cup pine nuts toasted
  • basil vinaigrette sweet
  • black pepper freshly ground

Instructions

  1. Arrange all fruit (yes tomatoes are actually a fruit) and fresh mozzarella on a platter. Drizzle with the Sweet Basil Vinaigrette. Sprinkle with the toasted pine nuts and fresh ground black pepper. Serve extra dressing at the table.
